Hola Philip

yes, you could and it won't change the meaning. The reason why we put in the hint to go for the literal translation "I don't stop..." is because in Spanish we don't need the modal verb poder to imply this, however in English you normally use "can/cannot" in this context. But yes, you can definitely say that.
