In the question "¿________ semana te vas de vacaciones?" the answer was Que, but since a specific week was being requested, wouldn't the answer actually be Cual? (sorry it seems I cannot make letters with an accent in the Q&A Forum fields)

If you're thinking that there are only a limited number of choices, that is, only three or four specific weeks are available to choose from for vacation, then I agree with you, cuál would be appropriate. If however there is no limitation and vacation can be taken at any time, then qué would be appropriate.

As Marcos rightly explained, it goes with the "range of options" so it would be more common to use ¿Cuál semana...? if there is a pre-conceived number of weeks (e.g. we've mentioned specific weeks in the calendar). If the possibilities are more open (to any week in the calendar) then ¿Qué semana...? would probably be used.
Bear in mind (for those who are focused on Peninsular Spanish, more than Latin American Spanish) that in Spain we don't use cuál/cuáles in front of a noun. We still use qué, even if the scope is small.
