Do other verbs fit this pattern? Or, just these two -ir verbs?

Not really - with this specific irregularity that we show in this lesson, there's only dormir(se) and morir(se). 

There's another verb that is similar in the sense that the o turns into u but in all forms, the verb podrir (to rot) but this is because there are two possible infinitives for this verb: podrir and pudrir

In some conjugations it admits two forms depending on whether you are using it as podrir or as pudrir, but in the present subjunctive all the forms have have -upudra, pudras, pudra, pudramos, pudráis, pudran. Here´s the entry for this verb in the RAE if you want to have a look.
