I have some questions.
´Es muy agradable porque la vuelta al frío es mucho más amena de esta manera.´ why is mucho being used instead of muy?
I thought that it will be used to describe ´amena´, an adjective.
´que ocurre a finales de septiembre ´. why is finales the plural being used and without articles ´los´?

With refernce to "mucho más amena", here "mucho" is an adverb, not an adjective, it's modifying the adjective "más". For mucho to be an adjective you´d have something like:
Hacemos muchas actividades amenas en el invierno.
We do lots of fun activities in winter.
Hace mucho frío y no hacemos muchas actividades amenas.
It's very cold [lit: it makes a lot of cold] and we don't do many fun activities.
In these sentences you can see how mucho is an adjective modifying the nouns "actividades" and "frío", so it needs agreement with the noun "mucho frío", "muchas actividades".
But in the initial sentence as it was an adverb, it is invariable, so you keep it as "mucho".
With reference to "a finales de...", this is how in Spanish we express "at the end of [a period/a season/a month...] - you may also here sometimes "al final de..." but it is more common to use it this way as a set structure. Here is a Kwiziq lesson about this precise topic. Have a look here.
