1. Yes, you can also say "el riesgo". There is a small difference between "I can't take THE risk!" and "I can't take THAT risk!", one being the definite article the and the other being the demonstrative that, but we are now accepting both in this exercise.
2. Mirar is not used in European Spanish for "watching the telly", so we are only accepting "ver".
In Spanish the difference between mirar and ver is very similar to the difference between "to look at" and "to watch".
