I am a little confused too :))
What you are saying in Spanish: quiero que coma and querer comer don't correspond with the English:
"I want to eat" and "I want that I could eat".
If you mean the difference between "I want to eat" and "I want you to eat", this would be:
Quiero comer (I want to eat)
Quiero que comas (I want you to eat)
The second one using que + subjunctive because it is two different subjects.
