I've seen both qué and cuánto in exclamatory sentences. I understand when it's clearly the number of something ( ¡Cuántos gatos! ) but when it's something less countable (e.g. "¡Qué orgulloso!" or "¡Cuánto orgulloso!" how do you tell which one to use?
¡Qué (noun/adjective)! or ¡Cuánto (noun/adjective)!

With adjectives you can't use cuánto (only with nouns). So, to say for example "How proud he is!" you need:
¡Qué orgulloso es!
You can use a noun and then use cuánto:
¡Cuánto orgullo tiene!
How much pride he has!
orgullo is a noun here
