why is portuguesas correct?

The answer is "portuguesas" because this adjective is referring to "nosotras" (feminine):
Nosotras vivimos en Dublín pero somos portuguesas.
We live in Dublin but we are Portuguese.

Could you say: Me encantan los quesos y las tartas franceses - i.e. both the masculine quesos and feminine tartas when combined take the masculine franceses? Or do you have to double the adjective and correctly genderize it (is that even a verb)?
