Suppose I wanted to say something like, "I wouldn't have minded if they got married, I was seeing someone else", or "I didn't care if the wrecked their's appetite with ice cream, I wasn't going to make dinner anyway" is there no combination of tenses that would admit the use o "por mí que"?

When we use "por mí que..." we are always referring to a future idea, so, to express something like this:
I wouldn't have minded if they got married, I was seeing someone else.
the structure "por mí que..." wouldn't work, so we'd have to express it more literally:
A mí no me habría importado que se hubieran casado/si se hubieran casado; yo ya estaba saliendo con alguien.
