I just found this sentence on Kwiziq:
'He estado de viaje y me ha encantado todo'
So, with de I guess roughly this means 'I have been doing travelling'
But please can someone explain...
1) The differences between using 'he estado de viajar' vs 'he estado viajando'?
2) And can we use 'he estado de +infinitive' with all verbs?

Estar de viaje is a set phrase for "to be travelling/on a trip", the same way we have other set phrases with "de + noun":
estar de vacaciones (to be on holiday)
estar de baja (to be off work)
estar de morros (to be in a bad mood)
...
But these are set phrases; it doesn't apply to everything so we cannot use it randomly with all nouns.
Then we can also use "he estado + gerundio" to express that you have been "doing something" as a more literal continuous tense:
He estado viajando por Europa.
I've been travelling around Europe.
Hemos estado pintando la casa.
We've been painting the house.
The structure "he estado + de + infinitive is not grammatical; "he estado de viajar" would be incorrect.
