This is a great lesson; thank you. I was told that I could use "mucho" after "Me gusta ...", for example, Me gusta mucho la música clásica. Is that correct? But, that I cannot use "Me encanta mucho..." Is that correct Could I express the idea of "really" loving something/doing something by repeating the verb, for example, "Me encanta encanta la música clásica?" Thank you.

yes, you can add "mucho" to "me gusta" to emphasise it and it would be pretty much the same as saying "Me encanta": Me gusta mucho / Me encanta
We don't add anything to me encanta, the same way it doesn't sound right to say: l love it a lot. Even when you say in English "I love it so much" which sounds OK to me, it would still sound a bit odd to say in Spanish "Me encanta tanto". It is as if "encantar" had it implicit so it would be redundant.
As per the repetition of the verb, no, we don't do that either. The only way you can emphasise me encanta is using another verb that implies more strength in the liking/loving:
Me fascina ...
Adoro ...
Me chifla ...
