About the sentence "Ella piensa muy despacio." Isn't that supposed to be "despaciamente", as it is an adverb that describes the way she thinks?

First things first... ¡Bienvenido al forum! and glad to hear you like Kwiziq.
Despacio is indeed an adverb (slowly) and the regular form of an adverb in Spanish is with an ending -mente, e.g. felizmente, rápidamente,... but in Spanish we can say "slowly" with two adverbs: despacio or lentamente. Despacio is irregular so it doesn't end in -mente however lentamente does (lento -> adjective for slow; lentamente-> adverb for slowly).
