Hi! Is there any difference between the prepositions en and sobre with the verb pensar? E.g. can I say Ellos siempre piensan sobre el trabajo ?

The verb pensar is always used with preposition "en", not sobre. The only case I can think of where you may use pensar sobre is when you are asking someone about their opinion about someone/something, and in this case, we most likely use "de", but "sobre" is also fine:
¿Qué piensas de/sobre Laura?
What do you think of/what's your opinion about Laura?
¿Qué piensas de/sobre la subida de los impuestos?
What do you think/make of the tax rise?
