To say you do something on a specific day of the week we can use el or los (singular or plural article), but the article in singular (el) generally implies that you are talking about "this [Monday, Tuesday, Wednesday...] coming". For example, today is Friday, and I say:
El domingo voy al cine.
On Sunday (this Sunday coming) I am going to the cinema.
When we refer to a general "On [day of the week] I do something/I usually do something", we use the plural article: los
Los domingos voy al cine.
On Sundays (every Sunday) I go to the cinema.
This is the difference in these two sentences:
El viernes tocamos la guitarra.
On Friday {this Friday} we are playing the guitar.
Mi padre come pescado los viernes.
My dad usually eats fish on Fridays (every Friday).
