why is it incorrect to say con ropas de athleisure? clothes is plural

the correct answer is ropa de athleisure.

As Marsha said, in Spanish we use the noun "clothes" in singular: ropa - it sounds very odd to use it in plural for us, whilst in English it's the oppossite. There are certain words that don't work the same in English and Spanish. We may include "clothes" = ropa in this lesson.
