Hola James,

We use "la" because the referent is "la persona" (the person), feminine. The word "padre" belongs to a different element in the sentence, and it is not linked to that pronoun:

"La persona con la que fui a la fiesta     -   era    -     mi padre."

Look at this other (similar) sentence, this time using a masculine referent:

"El hombre con el que fui a la fiesta era mi padre."

Because now we are using a masculine referent "el hombre" we use the masculine relative pronoun "el que".
