Can you provide some explanation on why “cada de los invitados” does not work? The quiz said that choice was incorrect when the correct answers were “cada uno de los invitados” and “cada invitado”. Gracias!

Hola Kent,
Simply put, "Cada de los invitados" isn't acceptable because "uno" is missing. If all the guests were female, then of course "una" would be used.
The only grammatically correct possibilities are "cada uno/a de" and "cada + singular noun."
You may be thinking of the English usage "Each of the guests ..." but in Spanish, when the noun is plural, the usage must include "uno/a" and would translate as "Each [one] of the guests."
