If I identify as "them" and I want to convey this in Spanish do I simply say "ellos soy?" 

Also is there a gender neutral form of "them" in this context?

If you want to say "I am..." you still use the pronoun "Yo soy..." because "yo" is neutral. 

In Spain people who identify as non-binary often use the new pronoun "elle" to refer to both him/her but with a neutral meaning (synonym to the English "they" for neutral", so you can refer to someone as "elle" instead of the gender marked él or ella for masculine or feminine. 

Bear in mind though that this mark for inclusive language is still something that hasn't been approved in the Royal Academy of Spanish.
