Gender and possessive adjectives for professions

I have a question about constructions like this: "Omar y Cristina son nuestros panaderos," e.g. "Omar and Cristina are our bakers." I understand it is "nuestros" because it is the nosotros form of the possessive adjective. However, I'm confused about the gender. Why is it masculine here?

The possessive adjectives agree with the noun they are accompanying: nuestros panaderos 

If your doubt lies on why is it masculine if they are a man (Omar) and a woman (Cristina), then the answer is: we use the masculine plural as a default gender in this case, therefore "nuestros".
