Could you use something like 'Me fío plenamente de él' instead of 'confío plenamente en él'? I know the hint said to use the pronoun 'I'; would it sound unnatural to say 'Yo me fío plenamente de él'?

You can say "[Yo] confío plenamente EN él" or ""[Yo] me fío plenamente DE él". These verbs are synonyms but they use different prepositions.
The reason to use the subject pronoun this time is simply because in this bit we are being more emphatic and this is one of the cases when we do use the subject pronouns, to add that emphasis.
