Considering acordarse vs recordar, is one more common than the other in LatAm Spanish for talking about remembering? Also, is there a lesson that talks about when to use and not use “de” with acordarse? Gracias!

I'd say "acordarse" is slightly more common to use than "recordar". Recordar is also used in more "nostalgic" situations, but you can also use acordarse here.
We don't have any specific lesson about acordarse used without "de" because you always need "de" when talking about remembering "something" (acordarse de algo). We only drop "de..." if it is implicit because the thing to remember has been mentioned before, for example:
-¿Te acuerdas de Javier, el hermano de Carmen?
-No me acuerdo.
-Do you remember Javier, Carmen's brother?
-No, I don't remember (him).
