Can we use this with "un@(s) de"?

Good lesson.  I like this concept of partitives.

Can we use "uno de" in place of "alguno de" to mean "one of"?  Or is "alguno" only used in this context in Spanish?

Also, is there a list of partitives that use "de", such as "cada uno de" or "pocos de"?

There is no list but you have here another lesson on fractions that are also express a part/division of something which also uses "de". 

You can also say for example:

Muchos de los niños no vinieron al colegio.

Lots of the children didn't come to school.

La mayoría de la población votó en contra.

The majority of the population voted against.

Una gran parte del alumnado es de familias pudientes.

A big part of the student body comes from wealthy families.

When you use "uno/a de..." you refer to just one specific..., as opposed to alguno de... which is more indefinite, an abstract idea of "one, some of.."
